Greek Lemon Chicken Thighs And Potatoes

1/2 cup fresh lemon juice (two lemons)
1/2 cup fat-free chicken broth
1 Tbsp olive oil
4 clove garlic clove(s), minced
2 Tbsp fresh oregano
1 sprays cooking spray, (5 one-second sprays per serving)
1 1/2 pound skinless chicken thigh(s), boneless, about 8 thighs
1 pound uncooked new potatoes, cut in half (about 10 small potatoes)

Place lemon juice, broth, oil, garlic and oregano in a large resealable plastic bag or medium glass bowl. Add chicken, seal bag or cover bowl, and marinate at least 2 hours or up to overnight in refrigerator.

Preheat oven to 350ºF. Coat a 9 X 11-inch pan with cooking spray.

Place chicken and marinade in pan; add potatoes. Bake 60 minutes, or longer for softer potatoes. Yields about 2 chicken thighs and 5 potato halves per serving. (Note: You may substitute boneless, skinless chicken breasts for the thighs but reduce the cooking time by 15 minutes.)


Looks pretty bland but it was very lemony and garlicy ... yummy! I used chicken breasts and ground oregano (cuz I had no fresh). Though I've made it in the past, it's been a while. And in my effort to get used to the crockpot, I cooked it in that rather than the oven, which worked out well.

Politica, Toronto, ON

Joe, our property manager, took the Condo Board (I've been on the board since 2002) out for Chrismas dinner tonight. We went to Politica (Strachan/Adelaide) which is in our 'hood.

Snow day

We got some snow today. Not too much and it's not too cold out right now.

I took KC and Nova out for walk just now and they loved jumping in the snow and sniffing. Here they are just before I put Nova back in his place so he'll be there to greet his mom and dad when they get home.

Gord and I don't really celebrate Christmas but I like putting lights up outside. Nothing too crazy but here's our place.

Morning walk

KC, Nova and I started our day with a long walk around the 'hood. I haven't had them out for our long walk in a while because of all the salt on the sidewalks (it hurts their paws).

It's a grey day and a bit nippy out but they had their sweaters on to keep them warm.

Crockpot Barbecued Meatballs

Crockpot Barbecued Meatballs

Crockpot barbecued meatballs, made with frozen prepared meatballs or your own homemade meatball recipe.

3 pounds frozen meatballs
2 medium onions, cut in wedges
1 bottle beer, 12 ounces
1 1/2 cups ketchup
2 tablespoons red wine vinegar
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup brown sugar

Combine all ingredients in the slow cooker. Cover and cook on low 8 to 12 hours.

About 96 meatballs. Also, you can use your own homemade meatballs, first browned in oven or skillet.


I used frozen chicken meatballs and forgot to buy onions so left them out. It's the first time I've used a crockpot. And I served them with brown rice. They turned out yummy and I would make them again.


And I got out my bread machine and made some white bread to go along with supper.

My mitts are finished

I finished my mitts at Gord's folks' place last night.

I'm pleased with the way they turned out.

Then I started another pair and finished them just now. Same pattern but with just one colour.

Early Christmas celebration

Gord and I, along with Ken, Gord's son, spent the weekend at Minnie and Keith's, Gord's mom and stepfather. They live about a three hour drive NE of Toronto, north of Belleville. We drove up yesterday afternoon and came back this afternoon.

We celebrated an early Christmas with a big delicious turkey dinner and gifts with Judy, Gord's sister, and Doug, her husband, and Kyle and Kerri, Judy and Doug's son and daughter-in-law.

Keith discovered two kittens on their porch at the end of October and took them in. Minnie has named them Gingham and Calico.

They are about four months old and very cute. Minnie is trying to find a good home for them, though deep down she'd like to keep them.

Because they are kittens, they are into wrecking everything ... plants, etc. So sometimes Minnie has to put them in "jail" for a time-out to settle them down.


They ended up with Snowflake in the same way a couple years ago.

His leg was broken and his face was scratched ... they assumed he had been tossed from a car. His leg didn't set right but it looks like he has found a good home with them.

Gord's Christmas Party

Gord's work Christmas party was tonight at Six Steps.

Again Gord's company hired Kenny MacLean and his band, Rock Through the Ages, to play. Kenny was part of Platinum Blonde, a Canadian new wave band in the 1980s.

Kenny's band carried him (not literally) as he appeared to be hammered ... he only sang a couple songs.

Interestingly, the bass player was our waiter at the Cadillac Lounge on Canada Day.

City Hall - after dark

On our way home, Sister Sarah and I headed back to City Hall to see the lights.

Sister Sarah had her heart set on skating at City Hall.

I don't skate. I skated when I was a kid but was pathetic the last time I did six years ago. So I swore never again!

Honeycomb mittens

So now that I have the hang of making the honeycomb mittens, I picked up some nice wool at Romni yesterday and made a mitten last night. The other one will be finished in the next day or so.
The grey and purple match my jacket nicely!

KC is stylin'!

Sister Sarah and I did some shopping today.

I bought KC a new sweater and boots (the salt and snow hurt her paws).

Usually KC stops and lifts a paw and we have to give it a wipe before she'll continue. She hates boots but she was leaping around in the snow without stopping. Yay!

The front one fell off just as we got home.
